Linzer Torte - Mór Taste

Linzer Torte (Linzer Cake) is an Austrian classic, a shortcake pastry named after the city of Linz. It's originally made with redcurrant jam, but it is equally delicious with cherry jam, raspberry jam, blueberry or any other Mór Taste jam. The original recipe recommends 125 g of icing sugar. But as we all know: less sugar is mór.

What do you need:

  • 250g unsalted butter, cubed (plus extra for greasing)
  • 250g plain flour (plus extra for greasing)
  • 1 tbsp icing sugar plus extra for dusting
  • 125g ground hazelnuts or almonds
  • a pinch of salt
  • 1/2 tsp cinnamon 
  • 1/2 tsp mixed spice
  • 1/2 tsp bourbon vanilla extract 
  • zest of 1 organic lemon
  • 3 jars of Mór Taste jam
  • 1 egg, beaten

How to make it:

Step 1: Create a pile of flour on your work surface, rub in the butter cubes with your fingers to create crumbs. Add the pinch of salt, cinnamon, mixed spice, bourbon vanilla extract and lemon zest and ground hazelnuts/almonds. With your hands, gently work the ingredients together. If needed add some cold water. Shape the dough into a ball, cover in cling film and leave to cool in the fridge for at least 30 minutes.

Step 2: While the pastry is resting, have tea or coffee. Learn some geek facts for the next Pub Quiz: redcurrant = rote Ribisel (Austrian-German), rote Johannisbeere (German).

Step 3: Pre-heat the oven to 180°C/gas 4. Grease a suitable cake tin and then dust with flour. If you're lazy use baking parchment.

Step 4: Divide the dough 60:40. Roll out the bigger part, about 1.5 cm bigger than the diameter of your tin. Place the dough into the tin, and press onto the base. Leave about 1cm around for the edge. Fill in your Mór Taste jam, spread fruit evenly. Roll out the remaining dough, a little bigger than the diameter of the tin. Cut several stripes for the lattice. Cover the jam with the stripes in a lettuce/wafer pattern.

Step 5: Coat the dough with beaten egg. Bake the cake in the preheated oven for about 50 min.

Step 6: Leave the tart to cool and dust with icing sugar.

Step 7: Enjoy, but remind yourself that your partner, kids, family or friends might like a piece too - so don't eat all at once!
